Quick and easy recipe: Blueberry Ginger Kale Smoothie
3 cups frozen blueberries
3 cups coconut milk
1 cup kale, or more if desired
¼ cup plain Greek yogurt
2 teaspoons pure maple syrup
2 teaspoons grated ginger
water, if necessary, for consistency
Add all ingredients to a blender and blend until smooth. Add water if needed to get the consistency you like.
Experiment with other fruit if blueberries are not available.
Each of 2 servings includes:
8 grams protein
9 grams total fat
7 grams fiber
