‘Healthy Eats’ – All about ice cream
Upstate University Hospital dietitian Terry Podolak, RD, our 'Healthy Eats' expert, tells us everything we always wanted to know about a favorite summer treat--ice cream, including why we crave it and the best choices to satisfy those cravings.
'Simple Vanilla Ice Cream'
1 cup whole milk
3/4 cup granulated sugar
pinch of salt
2 cups heavy cream
1 tablespoon of pure vanilla extract
In med bowl combine milk, sugar, and salt until dissolved. Stir in heavy cream and vanilla. Cover and refrigerate 1-2 hours, or overnight.
Turn on ice cream maker, pour mixture into frozen freezer bowl and let mix until thickened (about 15-20 min). Ice cream will have soft creamy texture if you like a firmer consistency, transfer ice cream into air tight container and place in freezer.
