Mint Chip Avocado Ice Cream

  • 2 large ripe avocados
  • 1/4 cup honey
  • 1/4 cup coconut milk
  • 1 tsp peppermint extract (or vanilla extract)
  • Pinch of salt
  • 1/2 bar dark chocolate (finely chopped)
  • 1 banana (optional)


  1. Add avocado, honey, coconut milk, and peppermint extract to blender or food processor. Blend until smooth.
  2. Poor into freezer safe dish and fold in chocolate chunks.
  3. Cover and freeze for a minimum of 2-3 hours.
  4. Enjoy!!
Tip: Don’t like coconut milk? Swap it out for lactose free milk or low-fat dairy milk.
