Mint Chip Avocado Ice Cream
Yield: 2 Servings
- 2 large ripe avocados
- 1/4 cup honey
- 1/4 cup coconut milk
- 1 tsp peppermint extract (or vanilla extract)
- Pinch of salt
- 1/2 bar dark chocolate (finely chopped)
- 1 banana (optional)
- Add avocado, honey, coconut milk, and peppermint extract to blender or food processor. Blend until smooth.
- Poor into freezer safe dish and fold in chocolate chunks.
- Cover and freeze for a minimum of 2-3 hours.
