Easy Egg Salad

Homemade egg salad with leafy green lettuce between two slices of multi-grain bread.


  • 8 eggs
  • 1/2 cup mayonnaise
  • 1 tsp yellow mustard
  • 1/4 cup chopped green onion
  • 1/4 tsp paprika
  • Salt and pepper to taste
  1. Chop peeled hard-boiled eggs. Place eggs in a bowl with the remainder of the ingredients. Mix until combined.
  2. Serve on your favorite bread as a sandwich or as a dip with crackers or sliced vegetables.
