Comfort Foods Made Healthy: An Evening With Chef Dave Fouts

Chef Dave Fouts, the nation’s first bariatric chef, will visit Upstate University Hospital at Community General Thursday, Feb. 9 for an activity-filled day that includes cooking demonstrations and much more.
Once tipping the scales at 390 pounds, today Fouts is fit and trim, and helping adults, children and schools prevent and overcome a disease he once suffered from—morbid obesity.
On Thursday afternoon, Fouts will present Changing the Taste of School Lunch to school officials from Onondaga and surrounding counties. Fouts, a member of the only group that lobbies Congress on obesity issues, will talk about how to change school lunch programs. Specifically, his goal is to improve the quality and nutritive value of foods served, increase the participation in number of meals served, and increase nutrition education in the classroom. As a twist to the afternoon, Fouts will serve attendees a lunch that is a meal featured on the school lunch menu of one of the many school districts he has worked with.
That evening, Fouts will prepare recipes that are bariatric- and diabetes-friendly at Comfort Foods Made Healthy: An evening with Chef Dave Fouts at the Community General campus cafeteria. Doors open at 5 p.m. for a book signing, and the feature demonstrations and samplings begin at 6:30 p.m.
The following recipes will be demonstrated live:
• One Pot Beef Stew
• Homemade Chicken Pot Pie Lasagna
• Italian Meatloaf
• Southwestern Chive and Corn-Studded Mashed Potatoes
• Banana and Almond Bread Pudding
At this event, he will exhibit various cooking techniques and he will also share his very personal experiences of celebrating his “New Birthday” as a bariatric surgery patient, and will demonstrate how we can eat the Filet Mignon of food for life by eating the best and healthiest of foods.
